turmeric + ginger muffins

preheat the oven to 350. gather ingredients + 1/2 tsp baking soda & a pinch of salt.

mix the eggs, coconut milk, maple syrup (we used coconut nectar), and vanilla in large bowl. whisk together all dry ingredients. combine wet & dry ingredients, mix until smooth. 

pour batter in muffin pan, leaving 1/4 room for muffins to rise.  bake for 8-10 min. serve with softened butter & honey.
